Ingredients:
- 7 tablespoons of extra virgin olive oil
- ½ teaspoon of salt
- 2 tablespoons mustard
- 5 grams of freshly ground pepper
- 3 tablespoons of honey
- 1 tablespoon cider vinegar
- 1 small lemon
- 4 teaspoons of sugar
- 2 oranges
- 7 tablespoons of almond slices
- Half romaine lettuce or any other variety
- 3 tablespoons dried cranberries
- 1 large ripe avocado
How to make avocado and orange salad:
- Add the seven tablespoons of extra virgin olive oil to a container (preferably glass). Add two tablespoons of mustard and three tablespoons of honey. Add a tablespoon of cider vinegar.
- Wash and cut the lemon in two and squeeze the juice into the container together with the other ingredients. Wash, cut and squeeze the juice of half an orange and mix lightly with the other ingredients.
- Add half a teaspoon of salt and freshly ground pepper. After this process, mix or quickly shake the contents of the container for two minutes until an emulsion is generated. Reserve.
- Wash the lettuce, drain and allow to dry. Cut the lettuce with your hands. It can also be cut with a special plastic lettuce knife. Put in a medium bowl.
- Heat a skillet over medium heat and add four tablespoons of sugar. When it begins to melt, add the almond slices and mix with the sugar. A caramel will form that will stick to the almonds and give them color. When golden brown, remove from heat and cool on aluminum foil.
- Wash and peel the orange. Then cut into wedges and add them to the source with the lettuce. Add the dried cranberries and remove the skin from the avocado. Cut into medium pieces and add them to the bowl.
- Add the caramelised almonds and bathe with the dressing. Mix, correct the salt and serve immediately.
