Avocado, orange and pomegranate salad
• 1 endive
• 1 avocado
• 1 orange
• juice of 1 orange
• 1 pomegranate
• 12 peeled walnuts
• 1 tablespoon mustard
• extra virgin olive oil
• Salt
PREPARATION
1. Wash the endive, dry, chop andreserve it in a bowl . Cut the pomegranate in half and beat it with a spoon forthe part of the skin until all the pimples come out. Reserve them.
2. Peel the nlive orange removing the skin and white part. Take out the slices andreserve them.
3. To do the vin a bowl, beat the mustard with the orange juice and 3-4 tablespoons of oil.
4. Cut the avocado in half, remove the pulp with a cuchara and cut it intohalf moons.
5. Season the escarole, garnish with the vinaigrette and mix well. Add the grainspomegranate, walnuts, avocado half moons and orange segments.
Divide the salad among 4 plates.
