Lemon Poppy Seed Muffins

Lemon Poppy Seed Muffins are tangy, slightly crisp on the outside and ultra moist inside. Topped with a simple sweet lemony glaze. Quick, easy, and delish!

Lemon Poppy Seed Muffins


• 80 pastry flour

• Chemical yeast 2

• Sugar

• Eggs M 2

• 1 vanilla bean

• Butter 95

• Lemon juice 20

• Lemon zest 0.5

• Poppy seeds 5


1. We heat the oven to 180º with heat up and down without air.

2. We beat the sugar with the two eggs, the lemon zest and the seeds ofvanilla.

3. Add little by little, and without stopping beating, the warm melted butter and thelemon juice.

4. Add the sifted flour and impeller mixture three times. We mix welland we add the poppy seeds.

5. We pass the dough carefully to the muffin capsules, filling them 3/4 parts ofhis capacity. We bake the muffins at 175º for about 25 minutes or untilare golden.

6. We remove from the oven and let it cool before consuming.
