Orange and cinnamon cream

The rich and fluffy texture, and the flavor of warming spices and citrus, are what makes this cream so utterly mouthwatering.

Orange and cinnamon cream

Ingredients for 4 people

• 4-5 oranges

• 6 egg yolks

• 125 ml of water

• 1 tablespoon of cornmealrefined

• 2 tablespoons of sugar

• 1 cinnamon stick

• mint leaves


1. Take the segments of 1 live orange and put 2 segments in each of the 4 containerswhere you are going to serve the cream. Squeeze the rest of the oranges until you get300 ml of juice. Reserve it.

2. Grate 2 oranges and put the zest in a large bowl. Add 1 tablespoon of sugarand the cornmeal, and mix well.

3. Pour in 200 ml of orange juice and stir until the ingredients remainperfectly integrated. Add the egg yolks while stirringwith the manual wand. Reserve the mixture.

4. Put the water (125 ml) in a saucepan. Add the cinnamon stick and put it to heat.Also add 100 ml of juice. When it starts to boil, remove the branch ofcinnamon. Pour this liquid over the previous bowl. Stir well and pour all ofnew to the pot. Cook everything until it thickens.

5. Spread the cream into the four bowls. Sprinkle the creams with the rest of thesugar and with the help of a blowtorch burn the sugar until the sugar iscaramelized
